1. The Roasted Bean Weight is Lighter Than The Weight of The Green Bean.

 Based on the International Coffee Organization standard, green beans which have been dried and processed after harvest have a water content of around 12,5%. Of course, after the green beans get roasted, something will change that causes the water content in the green beans to decrease. The water content in green beans will reduce because, in the process of roasting, evaporation occurs. So, the water content owned by coffee beans will reduce and cause the coffee beans to lose water content approx 16%.

2. The First Crack and The Second Crack

One of the famous stages during the roasting process is “the first crack”, which happens after the roasting temperature is approximately 196°C. After the first crack, the second crack will occur if the roasting temperature reaches around 224°c.

3. Roasted beans are divided into 4 types based on the color

Light roast has light brown color and a non-greasy surface. Light roast has a lingering flavor like green bean and tastes like nuts and fruit.
Medium roast has medium brown color and minor sweetness. The level of taste and acidity is equal.
Medium-Dark roast is rich in color and looks a little shiny. A medium-dark roast has a bitter taste and a low level of acidity.
Dark roast has darker and bolder color and looks oily with a high level of bitterness. Dark roast can be reached by roasting the beans after the second crack.

4. The aroma of coffee beans will change when roasted

At the start of roasting, the coffee beans will smell like hay. After the first crack, the coffee beans have a new aroma that smells like homemade popcorn. When the second crack happens, the smell change to burnt sugar or roasted nuts.

5. The average roast time only takes approx 12 minutes.

The average time needed for roasting foremost takes approximately 12 minutes. But the most vital thing in the roasting process isn’t how much time is required for roasting but the method and phase based on the characteristic of coffee beans.

6. The coffee beans that just finished roasting aren't the best

The reason why brewed coffee after the roasting process newly finished isn’t the best is that the coffee beans that just finished roasting have to go through the process known as “resting”. Resting is a process where the coffee beans have given time to release the carbon dioxide which is produced during the roasting process. Carbon dioxide should be released from coffee beans to have an optimal taste. But, if the time is too long, the taste of coffee beans will be stale. So it needs the right timing to release the carbon dioxide maximally without allowing any loss of flavor.

7. Coffee roasting connects communities

To become a coffee roaster, we must set up a way to continuously re-stock green beans. Green beans are the product of coffee cherry plantations which should involve farmers and processors.
